If you don't like mayonaisse, stop reading here.
If you love mayo like I do, you will die for this dish. When my mom first told me about this recipe I thought, that cannot be good - it is too simple to be delicious. Damn was I wrong. I usually have these ingredients kicking around the house, so this is definitely a go-to meal for us.
Now, it is the opposite of a Weight Watchers meal, so if you are trying to lose weight, this is not the meal for you, but if you like to splurge every now and again, then Giddy Up!!!
3-4 chicken breasts (boneless)
2-3 cups of Helmann's Mayonaisse (depends on how big chicken is - you need enough to cover the top of all the chicken)
1/2 cup of parmesean cheese (I use the type in the green container but you can use fresh shredded)
Place chicken breasts into casserole dish. Mix mayo and cheese in bowl and cover the top of all the chicken generously. The measurements aren't exact so you can play around with them to make them taste good to you. I like it heavy on the parm. Sprinkle breadcrumbs over top.
Bake at 400 degrees for 25 minutes. This really depends on the thickness of your chicken actually. I tend to get thick breasts so it takes about 25 minutes to cook them all the way through, but when I have used the thin ones it takes a lot less time. Just cut one open and check.
I serve this with steamed asparagus, and some Long Grain Wild Rice - the 90 second micro bags.
In just about 30 minutes you have a DELICIOUS dinner treat for you and the fam. I guarantee if you like mayo you will looooooove this dish.
